Irish Potato Farl
You will need:
4 medium potatoes
A pinch of salt
1/4 cup all-purpose flour
1 Tablespoon butter.
First, cover the potatoes with water and boil them until they are tender when poked with a fork. Turn off the stove and drain the potatoes, then return them to the warm pan and let them dry off with the remaining heat. Then mash them until they are smooth. Pour them until a bowl and mix in the flour, salt, and butter. I also added garlic and minced scallions.
Next, knead the dough on a well-floured surface. Take a medium handful of the dough and roll it into a ball, about the size of a tennis ball or smaller. Use a floured rolling pin to roll it into a circle about 1/4 inch thick. Don't worry, it does come apart quite easily so it won't be perfect!
Last, either sprinkle a skillet with flour or lightly oil the skillet. Cook the farls for about 3 minutes on each side until they are browned evenly.
